The Ministry of Health will be stepping up its surveillance during Carnival season to ensure food handlers on the island adhere to the safety rules.
Chief Health Inspector Lionel Michael says training is under way in several communities.
He warns there are some foods that must be preserved differently to prevent food poisoning.

Michael says he is particularly concerned about meat products.

The health inspector says a person can be poisoned by simply eating foods that are not kept at the wrong temperature.
